Preparation
- (Can be prepared up to 2 days in advance)
- Bake potatoes 45 minutes in the oven or the microwave at high 5 to 6 minutes, having poked the skin beforehand. When well done, leave to cool for a few minutes.
- Cut potatoes in halves lengthwise and gently remove flesh (leaving a fine layer on the skin inside) taking care to not tear the skin.
- In a large bowl, mash potato flesh, bacon, shallot and OKA L’Artisan Smoke. Add salt and pepper.
- Return potato mixture to potato skins until they overfill.
- Cook in the oven for 20 min. or 15 min. on BBQ top shelf.

- 4 slices bacon sliced in small strips and cooked
