Preparation
Cheese sauce
- In a small saucepan over medium heat, melt the butter. Add the flour and cook, whisking constantly, for 1 minute. Whisk in the milk and cook until the sauce thickens. Add the Crème OKA and stir well to melt completely. Season to taste with salt and pepper, and keep warm.
Noodles
- In a large saucepan, heat the butter andwater. Add the zucchini and stir gently until soft, about 3–4 minutes. Season to taste with salt and pepper.
- Add the cheese sauce along with all the blanched vegetables; toss well. Serve with a generous amount of the watercress, almonds, shaved OKA cheese and pea shoots.

- 1 cup snow peas, blanched

- 1/4 cup sliced almonds, toasted
- 50 g OKA cheese, shaved
