That milk becomes mozzarella through the knowledge and effort of experts who are dedicated to giving our customers the very best. Agropur’s mozzarella production is overseen by two Wisconsin Master Cheesemakers who are certified in the style.

Wisconsin, a US state known globally for its cheesemaking excellence, is the only location outside of Europe to provide a master certification. The title is reserved for long tenured cheesemakers who undergo a program of rigorous study. Cheesemakers also must demonstrate their skill before the title is finally granted. It takes significant commitment, which passes through to their products.

Pat Doell, a Master Cheesemaker and production supervisor at Agropur’s Luxemburg, WI facility, said the master’s program gave him a far deeper understanding of the finer points of mozzarella.

“When you gain experience, you start to gain an understanding of what you should be seeing at various points in the cheese make,” Doell said. “You need to know what to look for and how to make adjustments.”

Mastery of the small details make the difference between a good mozzarella and an exceptional product, Doell said.
