Cross utilization of ingredients is creating exciting new bakery products

Agropur Ingredients is heading into some exciting product development territory. With the solutions platform now established, it has been much easier for the solutions groups to collaborate and cross utilize ingredients, allowing them to fall within new channels of the food and nutrition industry. One such objective is being carried out by the Agropur Ingredients – Custom Solutions Bakery and Private Label sales teams. On the development end, Julie Phillips, of Product Innovation, and Marissa Stubbs, of Bakery Ingredient Sales, are currently formulating better-for-you, indulgent sweet goods. Better-for-you items can include: reduced calorie, reduced sugar, reduced fat, high protein or high fiber.

Two stand out products are the protein brownie and protein cookie


The ready-to-bake brownie is available in a complete mix; the consumer just adds water, butter and eggs. ISO Chill® 9000, a 90% Whey protein isolate from Agropur Ingredients – Nutrition Solutions, along with milk proteins contribute to the protein base. Keystone® 9100, a stabilizer blend from Custom Solutions, is also found in the brownies and aids in providing structure and texture.

They’ve also reworked an existing protein cookie formula to be more easily prepared. The complete mix has been designed for flexibility which means it can be used for basic protein sugar cookies or versions with inclusions like chocolate chips or Protein Pods. Instantized BiPRO® Whey protein isolate has been combined with other dairy proteins to create a perfectly balanced Bakigen® protein base.

Bakery will be working with the Private Label sales group to push the products towards convenience and grocery store buyers. Conceptually both products can be purchased in two basic formats; packaged in a retail sized pouch or box for consumers to bake at home, or bought in bulk and taken to a contract manufacturer to be turned into a finished product.

 

Future plans include portfolio expansion

Down the road, Bakery intends to continue developing indulgent, yet better-for-you treats that utilize Agropur Ingredients manufactured products. Currently, other items currently on the radar include: cakes, muffins, and icings; as well as microwavable and single serve products.
