Preparation

  1. Cut onion and pepper and brown in a very hot skillet with oil and garlic for about a minute. Add salt, pepper and remove from heat.
  2. Place 4 tortillas on a work surface. Divide onion and pepper equally on each tortilla. Add in equal parts, cheese, cilantro, chicken and corn.
  3. Cook in a large enough frying pan on medium-high heat for 2 minutes per side (until lightly brown)
  4. These quesadillas can also be cooked on the BBQ at medium heat for 2 minutes on each side.
  5. Serve with:
    • Salsa;
    • Sour cream;
    • Guacamole.

  • 8, 8” tortillas
  • 1 cup grated OKA Light (130 g)
  • 1 thinly sliced onion
  • 1 thinly sliced red pepper
  • 1 chopped garlic clove
  • 1 tablespoon vegetable oil
  • ½ cup corn kernels (frozen or canned)
  • 20 to 30 fresh cilantro leaves
  • 1 cup cooked chicken
  • Salt and pepper
