Permeate

Permeate is a lactose-rich co-product produced through the removal of protein and other solids from fresh whey or milk. Milk permeate is produced through membrane filtration of milk. Whey permeate is a co-product of whey protein concentrate and whey protein isolate manufacturing.

Permeate is a rich source of lactose and is a versatile ingredient in food and fermentation applications. With a high amount of lactose, permeate is a suitable substrate for fermentation. In food and beverage applications, permeate can contribute to the functionality, nutritional benefits, and add a well-balanced, neutral taste. 

Permeate can be used as a cost-effective ingredient for added browning and flavor in baked goods. Researchers have discovered the salty characteristics of permeate make it ideal to replace or reduce salt in formulations such as soups.

Crino Deproteinized Whey
