In general, 10-11 grams of permeate will replace one gram of salt or three to four grams of delactosed permeate will replace one gram of salt. The recommendation to balance the addition of permeate or delactosed permeate is to also reduce other macro-ingredients like flour, fat, eggs, granulated sugar, and other carbohydrates. In many instances, a total reduced-cost formula is possible as permeate can replace more costly ingredients.
